Vegan pie (quiche) recipe? - vegan quiche recipe

I have tons of zucchini in my garden and I would use. And I really want to make a vegan quiche. I exclude the recipes online, but not enough, simple or tofu "cheese". Anyone have any ideas? I am Jack Pepper Tofu (which I have) and tofu, but I would prefer not to use, unless it is essential.
